3-Step Breakfast Casserole


Updated 12-19-19 for a more accurate bake time!

For those of us who grab 10 pretzel sticks and half a sugar cookie while running out the door and call that "breakfast" (hi, I'm talking about myself here), this recipe is for you. You can make this ahead of time (even FREEZE it ahead of time and bake it later), and it's protein-packed. 

Spoiler alert to my husband: I will absolutely be serving this on Christmas morning because I can have it all made up the night before and then just pop it in the oven Christmas morning. (But I know you won't be mad about it, Devin, since you and I ate the entire thing in one sitting last week, minus the plateful that our dog jumped up and ate...that jerk....)

In trying to eat healthy during the day as a new mom, I'm also setting an alarm in my phone to take my vitamins! My midwife recommended prenatal + DHA vitamins during my pregnancy, but she also said it's super important that I keep taking them while nursing. By taking Nature Made Prenatal Multi +200mg DHA vitamins (which I got at Sam's Club, because they have everything!) I'm making sure that my body is getting the nutrients it needs. 



What you need:
  • 3 c cheese (I used 2 cups sharp cheddar & 1 cup colby jack)
  • 6 eggs
  • 1c half and half
  • 7 slices cooked bacon, torn into little pieces
  • 1/4 of an onion, shredded (I used a cheese grater)
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 bag frozen tater tots

What to do: 
  1. Mix everyyything together except the tater tots, and pour it into a pie dish. 
  2. Dump the bag of frozen over the mixture & spread it out a little. (In the pictures, I had only used half the bag of tater tots and as you can see I should have used the full thing!
  3. Bake at 450 for 45 mins to 1 hour, or until the tater tots are golden brown and the egg mixture is firm to the touch. I realize this takes a long time to bake, so prep it the night before and stick it in the fridge so it's ready to go in straight in the oven (WHILE IT PREHEATS!) in the morning.
Isn't that insanely easy?!
