Egg, Spinach & Ranch Wrap


Me on a weekend: I LOVE BREAKFAST A RON SWANSON AMOUNT.

Me on a weekday: I'll eat cold leftover rice standing over the sink, 60 seconds before I need to leave. Or, I'll just bring goldfish and eat them in the car.

I confessed in this 3-step breakfast casserole recipe that I'm notoriously bad at eating healthy breakfasts during the week. I serve Aiden fairly healthy breakfasts or eggs/fruit/whole grain cereal/oatmeal, but it feels like IIIIII don't have the time to sit down and eat something real. Though I'm still a HUGE fan of breakfast casseroles (and I pre-made that 3-step one for Christmas morning!!), this is an easy breakfast to eat on the go. You can make it the night before, put it in the toaster oven while you get dressed, and bam. It's ready for you when you need to leave.

Lucky for everyone, this breakfast doesn't take that long to make. I didn't set a timer, but I'd bet $5 that it took me less than 10 minutes to make.




What you need:
  1. 1 large flour (or whole wheat) tortilla
  2. A small handful of spinach or "spring mix" salad
  3. 1/4 cup-ish sharp cheddar cheese
  4. 2-3 slices of avocado
  5. Salt, pepper, garlic powder to taste
  6. Ranch dressing

What to do: 
  1. Scramble 2 eggs, adding salt/pepper/garlic salt as desired. 
  2. Line everything up in your tortilla: spinach, eggs, cheese, and avocado. 
  3. Drizzle ranch over everything
  4. Fold the ENDS of the tortilla up, and then roll it shut. (Pretend you work at Chipotle. Those wonderful people know how to roll a STUFFED burrito.)
  5. Store in foil (to toast the next morning) or to eat it in the car because you're a multitasking champion. 





This easy wrap has all the favorites: eggs, spinach, avocado, and sharp cheddar drizzled in ranch! It only takes 10 minutes to make and you've got an easy, on-the-go breakfast. // via @ahopefulhood
